Amazing Cake Recipe

We just couldn't resist sharing this with you. These are incredible. Completely moreish and great for keeping you going when tired. They were a real treat for Sophie when she was a new mum and she highly recommends them.

The oats in them = slow-release energy which is really good for the early days (and breastfeeding).

 

And they taste completely brilliant as well as being easy to make.

 

Perfect to offer guests that come round or just to eat yourself. (Handy thing to make in the last months of pregnancy to be prepared for guests coming round).

 My Mum's Moreish Squares.

Ingredients
250g butter,
225g sugar,
225g self-raising flour,
150g porridge oats.
50g cocoa.

Set oven to 350f/180c

Gently melt the butter in a saucepan and stir in the sugar. Stir until the sugar has dissolved completely and then stir in the rest of the ingredients. Turn the mixture into an oiled baking tray or ovenproof dish measuring 8"x11". Press mixture firmly into the tray and place in oven for exactly 15 minutes. It should still be quite soft. Leave in tray to cool. Spread with icing(optional) and cut into squares when set.

Icing.
50g margarine or butter,
1 tablespoon strong coffee/water(adjust to taste)
250 g icing sugar.

Melt fat gently,add icing sugar and coffee and stir well. Pour over cooked mixture as above.

Eat. Enjoy. Be very very happy.
